Soak cow peas for minimum one hour and then pressure cook with enough water and little salt.
Chop the Ash gourd and Pumpkin into medium sized pieces.
Heat up the 1 cup thin coconut milk and then add in the ash gourd and yellow pumpkin, and bring to boil. Add the slit chillies and salt, cook for few minutes.
Once the pumpkin and ash gourd just turns soft, add in the cow peas and mix well.
Add in the 1/2 cup thick coconut milk and mix well. Heat it little in low flame for few minutes and shut off the stove.
Add the curry leaves and drizzle with coconut oil on top.
