Indian kitchen. These scrumptious eggplants are easy to grow and are
great in curries, roasted as in baingan bhartha,
coated in chick pea flour and deep fried as a pakora. Known in Hindi
as baingan, in Indian-English as
brinjals, and in England as aubergines, it will do well in your garden if
you can grow tomatoes.

Growth and Culture
- This member of the nightshade family originated in India and spread to
China.
- Eggplants are heat-loving plants that require a warm growing season. They
enjoy daytime temperatures of 80-90°F and a night temperature of 70°F.
- Best started indoors 6-8 weeks prior to the last frost. Space plants
12-18 inches between plants in the garden.
- Harvest when the skin is smooth and shiny.
