STUFFED KARELA (BITTERGOURD)

 

Ingredients

  • 250 g    small karela (bittergourd)
  • 3           onions chopped
  • 2           tomatoes chopped
  • 6           green chillies chopped
  • 1tsp       besan (chick-pea flour)
  • 1/2tsp    amchur powder
  • 2tsp       turmeric powder
  • 2tsp       coriander powder
  • 1/2 tsp   garam masala     
  • 3tbsp     ghee
  • 3tbsp     oil
  • salt to taste

Method of preparation

 1. Scrape the bitter gourd well.

 2.  Smear it well with salt and dry in the heat of the sun.  

 3.  Rinse well with cold water and squeeze out all water and split open on one side.

 4.  Heat ghee and fry onions, tomatoes, green chillies and amchur till brown.

 5.  Add coriander, turmeric powder, garam masala and salt.

 6.  Simmer for a minute an take it off the stove and keep it aside.

 7.  Make a paste of gram flour, fill in the bitter gourd with masala and seal the slit with the besan paste.

 8.  Heat oil in a thick saucepan add the bittergourd and shallow fry till tender.
